Ingredients:
4 large chicken breasts
2 cups almond flour
salt and pepper to taste
3 eggs
6 oz. baby spinach
12 slices Swiss cheese or Jarlsberg
12 thin slices of SCD legal ham
8 thick slices of Fontina cheese

Chicken Rollatini

Directions:
Pound chicken breasts with meat tenderizer until about ½” thick. Season both sides with salt and pepper.

Lay each breast flat and place baby spinach on top. Then cover with 3 slices of ham, followed by 3 slices of Swiss cheese. Roll up chicken breast with spinach, ham, and cheese on the inside. Tie up rolled stuffed chicken with two pieces of cooking string.

Dip each rolled up chicken breast into egg, then coat generously with almond flour.
Place each chicken breast on parchment paper on a broiler pan or cooking sheet with the oven preheated to 350°F and cook for 30-45 minutes or until internal temperature reaches 160°F, as determined by a cooking probe.

15 minutes into the cooking process, place two slices of Fontina cheese on top of each chicken breast and allow to melt down the sides of the wrap.

Take out of the oven, let cool for 5-7 minutes, cut cooking ties and serve.

Ingredients:
1 tomato
Cheese (We use Cabot Classic Vermont Cheddar)
Red vinegar
Olive oil
Dried oregano, dried basil, & pepper to taste

Improvised Caprese

Directions:
Slice the tomato and place a slice of cheese on top.

Mix olive oil, red vinegar, oregano, basil, and pepper into a small bowl. Pour this mixture on the tomato and cheese right before serving.
